Vin Santo Poggio Salvi this dessert wine makes up a small part of our production but is of an extremely high quality. It is made of Malvasia white grapes and Trebbiano grapes grown on the estate and picked at a very mature state (usually towards the end of the red-grape harvest). The grapes are selected with great care choosing the least-compressed and best-preserved bunches which are then hung, to hooks from the ceiling, in well-aired rooms. After a couple of months the grapes are pressed and the juice, which is dense and very sweet, is poured into 225 litre oak-vats and placed in the cellars where it is allowed to slowly ferment and to age for about four years subjected to all the differences in temperature as is required in the bestTuscan Vin Santo. During this time the wine oxidizes and takes on a golden colour. It acquires the aroma of the yeasts which have been deposited at the bottom of the vat during the procedure (the “madre”). The ageing process ends inside the demi-johns glass where it rests for a few months and finally inside the bottles.

Tasting notes: Vin Santo is a golden-colored dessert wine, with intense and complex perfumes which are the results of a long ageing process. The taste is velvety, harmonious and complex".

Recommended food combinations: Best suited for typical Tuscan dry sweets such as “cantuccini” and with strong-tasty cheeses such as “gorgonzola”.
