Rispescia
Vineyard extrends around 5 hectars along the Aurelia
Road south of Grosseto and located at an average altitude
of 80 meter above sea-level. The climate, influenced
by the proximity of the sea and by the sorrounding
hills that form a protective barrier from the winds,
determined the
healty ripening of the grapes. The vines trained by “Cord-tying” produce
about 55-60 Q.li of grapes per Ha. The type of grapes
allocated are: 85% Sangiovese, 10% Ansonica and the
remaining 5% Merlot. The harvest of Morellino begins
within the first 10 days of September. The alcoholic
fermentation lasts around 12-14 days followed
by the malolactic fermentation that terminates by the
end of October.
The wine treatment takes place at the place of origin
as Regulation does not permit the transportation of grapes
to Poggio Salvi, therefore, all the Wine processes approved
by the Protection Consortium, take place at a neighboring
farm. With the acknowledgement of DOC the wine
is then transported in wine containers to the Poggio
Salvi cellar in Sovicille, where the wine refinement
is completed. The bottling and packaging also takes
place at Poggio Salvi.
