made up of various farms donated to the church over the
centuries called “benefizi”. The farms are
spread around the gently sloping hills surrounding the
main building the church of Cervognano. The vines are planted
in the more famous 'crus' land of Montepulciano such as
Argiano, Nottola, Metina and Ciarliana, lands characterized
by its sun exposure and microclimate particularly suitable
for the production of great red wines. Some plants
date back to the '70s, but the majority have been recently
planted with a high density of plants per hectare (6.000). “Cord-Tying” is
a system of training new vines while the 'Guyot' is used
for the old plants. The grapes present are Prugnolo
Gentile (70%), a particular replicant of Sangiovese, the Mammolo
(10%), the Canaiolo (8%), the Sangiovese (5%), the Trebbiano
(4%) and the Malvasia (3%).
The Apse next to the church has been turned into cellars,
where the wine-making and refinement in Slavonia-Durmast
barrels (35hl) takes place. Bottling and packaging
on the other hand, takes place at another residential farm
